FRESH BLUEBERRY-PEACH SUMMER PIE

This is almost Heaven! The only real sugar is in the crust (plus any natural sugar in the fruit), there is no baking (except for the crust), and it is so easy to make.

1 Oreo Cookie Pie crust (sold in the stores; don't get any other chocolate flavor)
2-3 fresh peaches
2+ cups fresh blueberries
1/4cup lemon juice
1 TBSP corn starch
Almond Flavoring
Sweetener (optional)

1. Bake pie crust according to package directions. Cool

2. In a pan: Mash 1 cup blueberries. Add: 1/4 cup water mixed with 1 TBSP. corn starch

3. Cook and stir until thick and no longer cloudy looking

4. Add: 1/4 cup lemon juice and some Almond flavoring; set aside while assembling pie shell (Note: may add some sweetener to taste; I prefer Splenda)

5. Fill bottom half of pie shell with peeled and sliced fresh peaches

6. Fill remaining pie shell with other 1 cup+ of fresh whole blueberries

7. Spread Blueberry glaze to cover top of pie

8. Chill in fridge several hours ahead of serving time

9. Top each serving with whipped cream
