Linbo’s Blueberries Recipe #27: Blueberry Soup Printer-friendly

1 cup blueberries
juice of 1/2 lemon
1 stick cinnamon
2 cups water
pinch of salt
1/4 cup sugar (may add more for depending on desired sweetness)
1 tablespoon cornstarch mixed with 2 tablespoons of water to form a paste
1/2 cup heavy cream 

Simmer berries with lemon juice, cinnamon and water for ten minutes or until berries are soft. Add the salt and sugar. Stir cornstarch paste into hot berries. Bring to boil, stirring and simmer for 2 minutes. Take from heat and puree in blender. Cool and stir in 1/2 of cream. Stiffly whip remaining cream and garnish each bowl with a spoonful and also with a few reserved berries.
